In Spain there is a variety of recipes, they distinguish themselves in many ways such as culture, religion and climate. But of course, most of the Spanish cuisine is influenced by seafood and it's flavor, available thanks to the ocean that surrounds the country.

One of the most famous main dish is the paella, a dish made mainly of rice and sometimes seafood. Paellas are whether vegetarian, Valencian, seafood or mixed. Seafood paellas are more common and famous. Paellas originated from Valencia just like a variety of other food. This is the picture of a seafood paella, it is made of shrimps, mussels, peas, tomatoes, garlic, chicken and so on.

The Fideuà:

This is the fideuà ( also called fidueada ), a noodle dish, similar to the Paella. Most of the time, it is mainly made of seafood and noodle.

There is a variety of ways to make a fideuà but shrimps and white-fleshed fishes are usually found in all fideuà.

Arroz A La Cubana:

This is a rice dish called arroz a la cubana ( also known as arroz cubano ) which mean Cuban-styled rice. This is a rice dish, served hot. It is famous in Spain but it's also popular in the Philippines and Peru. It is made of fried eggs, rice, tomato sauce and sometimes this is also served with fried bananas or sausages.

This is the arròs negre ( also known as arroz negro). It is also a rice dish with lots of seafood in it. It is also really special because we use white rice yet it becomes black. The black come from the ink of the squid or cuttlefish which also enhances the seafood flavor. We always use cuttlefish or squid in this dish but other ingredients include shrimps, peppers, garlic, olive oil, crab and so on.

Chicharrón:

This picture shows a Chicharrón, a dish mainly made of meat (most of the time pork but sometimes even mutton, chicken and/or beef). It can be served either hot or cold. We use the pork rinds (the skin of the pork) to cook this dish and it is usually seasoned and then deep fried.

Gacha:
This is called Gacha it is a staple dish that used to be very popular amongfarmers and country folk. Several Gachas can also be eaten as a desert. There are several variations of it such as Andalucía, Castile-La Mancha, Valencia and Aragon.

This special dish, also known as pinchos morunos, originated from Spain and is generally made of meat- pork, chicken,beef, or lamb. The meat is usually marinated with olive oil, spices, and herbs such as garlic, thyme, paprika, pepper and so on. This dish is traditionally cooked on charcoal braziers and served hot. It is served with bread lemon and wine.

Ajoblanco:

This is a popular cold soup. This white soup is usually mainly made of bread, almonds, garlic, water, olive oil and salt. It is usually served with watermelon or grapes. One interesting festival in the town of Almachar, Magala celebrates this soup on 2 September.

This is a Salmorejo which is also sometimes known as porra or ardoria. A salmorejo is also served cold and it is also a cream and marinade. The main ingredients of a salmorejo like the one in the picture usually consist of tomato, bread, oil, garlic and vinegar. This dish is usually pink-orange and thick because it includes a lot of bread.
